Go Plant-Based
Are you curious about plant-based food, but unsure where to start? Then Go Plant-Based is for you. Here, you’ll get both a practical and theoretical introduction to a food culture that is tasty, nutritious, and sustainable. You don’t need to be a vegan or an expert in nutrition to join. You just need to be curious about how to eat more plant-based and less animal-based, while still making delicious, satisfying, and easy meals.

If you're curious about plant-based food and want to learn how to cook healthy, simple and climate-friendly meals, Go Plant-Based is for you!
The subject is aimed at those who may lack the knowledge or inspiration to get started, and who aren’t necessarily vegan but want to learn more and try out plant-based cooking in a supportive and welcoming environment.

What do we do in class?
The classes are divided into two parts
Tuesdays: We focus on theory and reflection around a plant-based lifestyle. We watch documentaries, engage in dialogue, and start prepping for the week’s meals – for example, by soaking beans and preparing ingredients.
Thursdays: We head into the kitchen and cook. This is where we smell, taste, and experiment our way to delicious plant-based meals. We take photos and notes, so you can create your own recipe book to take home at the end of the semester.
You’ll learn how to meal prep, build a solid pantry, and figure out how to make easy and affordable plant-based food work in everyday life – even when you’re traveling, busy, or on a tight budget.

More than food
Go Plant-Based isn’t just about cooking.
We also dive into nutrition and explore common myths about a plant-based diet. You’ll learn things like:

Which foods provide protein, fiber, vitamins, and minerals

How to get enough B12, iron, and omega-3 while being on a plant-based diet

What to pay attention to if you want to have a healthy lifestyle while eating plant-based
Along the way, we work on small projects and events – for the rest of the school or the local community – where we spread the message and share our love of food with others.

Maria Larsen-Rasmussen
Maria has worked at Nordfyns for 16 years. She has several years of experience in the kitchen and works with fitness, CrossFit and cycling on the A-course SPORT. She also teaches electives with Street Food, baking and vegan delicacies.
